Lobster Newberg… I Mean, Wenberg
How lobster Newberg takes its name, this is one of my favorite all time food stories. It also is a fascinating foray into the twisted mind of someone crazy enough to own/run a restaurant.

For the anecdote, this dish was invented by a Mr. Ben Wenberg, who showed his buddy, Charles Delmonico, at the famous Delmonico's Restaurant, in New York. Chuck puts on the menu calls it "Lobster Wenberg" and everyone likes it.


Some time later, two men enter a horrible discussion and Delmonico took it off the menu. Of course, the bosses are like, "you said what? He said what? Whatsoever, just back on the menu." What he does, but not before changing the name to the anagram, "Newberg", purely out of spite. Hey, he could go to the lobster 'Bengrew '.

Strange but true stories of appellation side, it is really a great and simple recipe. As long as you don't step filming it, that is. Once you start with the sauce, you can not really stop until you are the spooning in pastry, this presented a little challenge in trying to get all the plans.
The sauce is rich enough, if you want something just thick enough to coat the meat, but not so thick that it covers it upwards. That said, if cook you a little further, until it almost begins to simmer, it will get a little thicker, if that's your preference. Just don't go too far, or the yellow can begin to form curds, and you lose the silky.

You want to avoid is this pudding consistency - as you can see on bad hotel buffets. In addition to attention to a few minutes of agitation, not much can go wrong. I really hope you give the recipe formerly, "lobster Wenberg,' a trial soon. Enjoy!

Ingredients for 4 appetizer size portions:
4 lobster tails (4 oz)
2 tablespoons clarified butter (butter melted with deleted Milky foam)
2 or 3 tbsp. sherry or brandy
salt to taste
1/2 cup of heavy cream
2 large egg yolks
Cayenne Pepper to taste
pinch of fresh grated nutmeg
Be used on buttery toast or puff pastry (video to follow) freshly baked shells
